Are the amount of AP classes restricted by your GPA in sophomore year and so on? Or is it only for freshmen going to 10th grade?

No, the restriction will continue throughout your time at Stuy. The usual rule is:

Everyone can take one AP class.

You need an 88 overall average to take two, a 92 to take three, and a 95 to take four. No one is allowed to take more than four.
